카사타 레시피

1. 카사타
리코타 치즈 600g, 설탕 60g, 바닐라익스트렉 4g, 다크초콜릿 40g, 믹스필 40g, 건살구 35g, 피스타치오 25g

① 원형1호 무스링에 바닥랩과 띠지를 두른 후 받침대로 바닥을 받친다.
② 믹서볼에 리코타 치즈를 부드럽게 풀어준 후 설탕을 넣고 설탕입자가 놓을 때까지 섞는다.
③ 다크초콜릿과 건살구, 피스타치오를 믹스필 크기로 자른 뒤 그릇에 옮겨 담으며 잔 부스러기는 털어낸다.
④ 3.을 골고루 섞어준 다음 2.에 넣고 섞는다.
⑤ 1.에 4.를 넣을 때 기포가 들어가는 것을 방지하기 위하여 실리콘주걱으로 바깥쪽부터 밀착하여 넣은 후 나머지 안쪽을 채운다.
⑥ 윗면을 평평하게 정리하고 랩을 씌운 뒤 냉동실에 6시간 굳힌다.
⑦ 띠지 분리 후 바닥면이 위로 향하게 올린다음 커팅한다.

ricotta cheese 600g, sugar 60g, vanilla extract 4g, dark chocolate 40g, mixed peel 40g, dried apricot 35g, pistachio 25g

⑦ Remove the belt and raise the floor surface upward before cutting.
